Oleev Nutty Spinach Salad


2 bundles spinach/ 680g (if bundle equals bunch), 1½ tablespoon Oleev Extra Virgin Olive oil, 2 handfuls pitted raisins (about 2 ounces), 1 handful pine nuts (about 1 ounce) and Salt.


  • Soak the raisins and pine nuts in water for 1 hour and drain

  • Wash the spinach thoroughly. Remove the stalks.

  • Bring ½ cup water to a boil in a pan. Drop the washed spinach in it, and cook them uncovered for few minutes over medium heat. Make sure that the water doesn’t evaporate completely. Add some water if necessary.

  • Drain the spinach. It is important that they have no water. Finely chop the spinach.

  • Heat 1½ tablespoons olive oil in a frying pan, and add the raisins and pine nuts. Sautee for 2 minutes over low heat, or until the raisins swells. Stir all the time. Add the drained spinach and a pinch of salt, and sauté for 5 to 7 minutes. Stir constantly to prevent sticking.

  • Serve hot.
